Lately I haven’t been so good to my body. These last weeks I didn’t have any time to go to my dance classes and I also have been eating very poorly. Too much chocolate, tiramisu and ice cream isn’t good for you, I know that now. And having Christmas Dinners with my committee don’t help as well… Anyways, with the New Year’s coming and all, I really wanted to get back on the healthy track. That’s why I was searching for some healthy snacks. Let’s be honest, who doesn’t like to grab a quick snack during the day? It’s very easy to grab something unhealthy, but now I have this great almond butter rice cakes recipe that’s super easy to make and will keep you full for a good while. And it’s super yummy too!
So how do you make this? It’s super easy: I used some whole grain rice cakes from Albert Heijn. Than I added a good layer of almond butter and topped it off with some sweet apple. Easy as what huh? I also got my almond butter from Albert Heijn, but I think you can get it at health stores like Eko Plaza or De Tuinen as well (for my Dutchies). And if you’re wondering, it tastes really differently to peanut butter. I don’t really care for peanut butter, but I love this almond butter! The rice cake is crispy and a bit salty, the almond is creamy and the apple adds a fresh & sweet bite. You have to try it out. 🙂
